Preparation: Just place the peach puree or nectar and the
Prosecco in a shaker, give it one gentle twist, pour into a Martini glass and
garnish with a peach wedge.
The Bellini was created in 1948 by Guiseppe Cipriani at the legendary Harry's
Bar in Venice, a favorite hangout for expats including Ernest Hemingway,
Sinclair Lewis, and Orson Welles. This is the original recipe, but feel free to
use any bubbly at hand. Do not add any simple syrup like some others lik to do.
It would be way too sweet.
