TRANSYLVANIAN PEASANT MEATLOAF |
Ingredients:
- 2 lbs ground beef, pork, lamb or a combination (I
like lamb and pork or beef)
- 8 oz sliced shiitake mushrooms
- 1 medium white onion chopped
- 1/4 C minced fresh parsley
- 6 minced garlic cloves
- 1/4 t dried thyme
- 3/4 C panko breadcrumbs
- 1 fresh egg
- 1/2 glass dry red wine
- 2 T canola oil
- 2 hard boiled eggs shelled
- 1 stick kabanos cut into 1/2" segments
- 1/4 lb pitted olives of your choice

Instructions:
- heat oil to a shimmer
- throw in mushrooms and onion
- sautee until the onion looks translucent
- In a medium bowl, combine ground meat, parsley, garlic, thyme,
breadcrumbs, fresh egg.
- mix in the kabanos and the olives
- place half of mixture in baking pan
- push the hard boiled eggs roughly equi-distant from the pan's edges
- cover with the rest of the mixture and meld the edges
- bake for 1 - 1 1/2 hours.
