TRANSYLVANIAN PEASANT MEATLOAF
Ingredients:
  • 2 lbs ground beef, pork, lamb or a combination (I like lamb and pork or beef)
  • 8 oz sliced shiitake mushrooms
  • 1 medium white onion chopped
  • 1/4 C minced fresh parsley
  • 6 minced garlic cloves
  • 1/4 t dried thyme
  • 3/4 C panko breadcrumbs
  • 1 fresh egg
  • 1/2 glass dry red wine
  • 2 T canola oil
  • 2 hard boiled eggs shelled
  • 1 stick kabanos cut into 1/2" segments
  • 1/4 lb pitted olives of your choice
Instructions:
  1. heat oil to a shimmer
  2. throw in mushrooms and onion
  3. sautee until the onion looks translucent
  4. In a medium  bowl, combine ground meat, parsley, garlic, thyme, breadcrumbs, fresh egg.
  5.  mix in the kabanos and the olives
  6. place half of mixture in baking pan
  7. push the hard boiled eggs roughly equi-distant from the pan's edges
  8. cover with the rest of the mixture and meld the edges
  9. bake for 1 - 1 1/2 hours.

C = cup
T = tablespoon
t = teaspoon
