ERNIE'S ANYTHING GOES STEW - page 1 of 2
Beef Stew Chicken Stew Pork Stew
Ingredients:

1 C sofrito
1 lb stew beef cubed
5 medium carrots peeled and cut into 1/4 inch pieces
2 large potatoes cut into 3/4 inch cubes
1 medium onion peeled and chopped
3 C beef stock
1 C dry red wine
1 medium potato grated
2 T red wine vinegar
2 bay leaves
2 T canola oil
salt and pepper to taste
Preparation:

heat oil in a large pot
brown beef in oil
remove beef and add vinegar, wine, grated potato and sofrito
bring to a boil scraping the pan with a wooden spoon to loosen bits
add the beef, beef broth and bat leaves
cover, bring to a boil the simmer for 1 1/2 hours skimming the broth occasionally
add onion and carrots and simmer for 10 minutes
add salt and pepper to taste (use a wooden spoon)
add the potatoes and simmer for 30 minutes more

serves 4
