BIGOS - POLISH HUNTER STEW - page 1 of 2
1/2 lb smoked bacon cubed
1 lb pork for stew
1 lb smoked kielbasa, 1/2" slices
4 cloves garlic, finely chopped
1 1/2 t whole caraway seed, crushed
1 t ground allspice
1 t thyme
1 t marjoram
1/4 C chopped basil
2 t smoked paprika
1 t cayenne
1 1/2 C shiitake mushrooms
1 large onion, chopped
2 medium carrots, diced
1 15 oz can diced tomatoes, with juice
1 lb cabbage, sliced 1/4-inch thin
1 lb sauerkraut
2 C dry red wine
3 bay leaves
Salt and pepper, to taste
Canola oil, as needed
Pat the beef dry with a paper towel and season with salt and pepper. Place a large pot on medium-high heat and pour in enough oil to cover the bottom. Brown the beef in the oil (about 2 minutes per side). Remove beef and place in a bowl. pour out the fat and pour 1/4 C water into the pot and stir to dissolve the browned beef bits. Pour the juice into the meat bowl. Repeat the process with the pork.

Put the pot back on the stove, add a little more oil and the kielbasa. Sautee until golden-brown on each side. Remove to the meat bowl, but leave the fat in the pot.
