Ernie's Hang on to Your Hat Chili

1 lb ground beef
1 lb stew beef cubed
1 lb pork loin, cubed
1 lb kielbasa, sliced (1/4" slices)
1 large yellow onion, chopped
1 garlic head, minced
3 habanero peppers minced
1 red/yellow sweet pepper diced.
1 (6 ounce) can tomato sauce.
1 (10-12 ounce) can peeled tomatoes.
5 T chili powder
2 t ground cumin
2 t ground oregano
2 t paprika
1 (10 ounce) can beef bouillon
1 12 ounce beer
Salt to taste.
Method: Brown meat till fat cooks off. Transfer to a large pot. Sautee onion, garlic & peppers in pan drippings until tender. Add tomato sauce - mix well. Add remaining
ingredients - mix well. Simmer 2-3 hours adding water (if needed), stirring occasionally. Throw in 6 cherry tomatoes or two diced vine tomatoes and turn off the heat.

About 30 minutes before serving add: 2 t brown mustard.
Serve with rice and beans.
