YEMENITE HILBE |
1 T - methi (fenugreek) seeds 1 cup water 1 bunch cilantro
6 cloves garlic 2
habanera peppers 1 leek stalk 3 tomatoes 2 lemons |

- Soak methi seeds overnight in a medium sized pot filled with water
- Place drained seeds in blender
with 2 cups water.
- Add rest of ingredients gradually and keep blending until
desired texture is achieved. Texture is something that needs experimenting, so
you might want to taste the mixture and decide whether it needs more blending.
- The green part of the leek might be a bit stringy - if
that bothers you, use only the white part. Leeks also tend to be sandy,
please wash thoroughly.
- Pour into mason jar and refrigerate
- Serving a small portion of hilbe with any entree will
enhance your culinary enjoyment as well as benefit your health.
In Folk Medicine, fenugreek is used to minimize heart and
diabetes issues. It is said that it lowers cholesterol, blood sugar levels and
it assists in insulin processing.
