CUBAN PICADILLO

1 1/2 lb ground beef
1/2 large yellow onion, chopped
5 cloves garlic, minced
1 red/yellow bell pepper diced.
1 (6 ounce) can tomato sauce.
2 vine tomatoes diced.
2 T cilantro minced
1 t ground cumin
2 t capers
1/4 cup pimento stuffed olives
Salt and pepper to taste.
Method: Brown meat till fat cooks off. Transfer to a large pot. Sautee onion, garlic & peppers in pan drippings until tender. Add tomato sauce - mix well. Add remaining
ingredients except olives - mix well. Simmer 2-3 hours adding water (if needed), stirring occasionally. Throw in 6 cherry tomatoes or two diced vine tomatoes and turn off the heat.

About 30 minutes before serving add: 2 t brown mustard.
Serve with rice and beans and garnish with olives.
