SAMBAL
Ingredients:

1 large white onion finely chopped
5 minced garlic cloves
1 inch fresh grated ginger
4 habanero peppers seeded and finely chopped
1 lb mixed chicken livers, hears & gizzards
2 T soy sauce
1 t laos powder
1/4 t salt
1/4 t black pepper
3 T canola oil

Preparation:

wash gizzards with vinegar and salt - rinse and drain
remove top of chicken hearts with veins and discard
suate gizzards and hearts for 20 minutes - rinse, drain and chop into small pieces
cut livers into small pieces

in medium wok heat oil
sautee onions til they start to brown
add the meats gradually not allowing the oil to cool off
add the rest of ingredients and simmer for 20 minutes stirring occasionally

Sambal is a typical Javanese dish that was adopted by the people of Suriname. It is supposed to be very spicy and used as a condiment. I think sambal means pepper and there are other sambal dishes out there, but this one is my favorite.
