SEAFOOD FONDUE
Ingredients:
  • Fondue cheese sauce
  • 2 T canola oil
  • 6 ounces peeled and deveined shrimp, chopped
  • 4 ounces chopped crawfish tail meat or scallops
  • 4 cloves minced garlic
  • 1 t Cajun seasoning
  • 1 habanero pepper or two jalapenos minced
    (depends on your love of heat)
  • C sliced shiitake mushrooms
  • 1/2 C diced green onions
  • 1/2 C dry red wine
Instructions:
  1. prepare basic fondue and set aside
  2. in medium saucepan heat oil
  3. add seafood stirring constantly.
  4. when shrimp start turning orange add garlic, Cajun seasoning and hot pepper
  5. add mushrooms and onions and keep stirring
  6. add wine, and simmer for 3 minutes.
  7. fold the sauted seafood into the fondue and stir until it gets incorporated
  8. pour into fondue pot and serve with crusty French bread.

    C = cup
    T = tablespoon
    t = teaspoon

    Serves 4-6
