CIORBĂ DE VARZĂ (Sour Potato Soup)

1 1/2 pound head of shredded cabbage washed and drained.

CIORBĂ DE CONOPIDĂ (Sour cauliflower Soup)

1 1/2 pound head of cauliflower, washed, drained and cut into 1" pieces. Add at the 20 minute mark

CIORBĂ DE OREZ (Sour Rice Soup)

1/2 a pound of rice, washed, and drained.

CIORBĂ DE FASOLE VERDE (Sour Green Bean Soup)

1 lb green or yellow cut beans

CIORBĂ DE CIUPERCI (Sour Mushroom Soup)

1.2 lb portabello, crimini or, shiitake mushrooms, washed and sliced thinly

All the Romanian soups on this page can be vegetarian if you follow the basic recipe but use veggie stock, exclude the egg and do not serve sour cream. It is of course a matter of choice.
