I've been searching for a good Shawarma for a long time. Forty-five years ago I
left Israel and moved to NYC. I took me a while, but eventually, I found some
very satisfactory lamb shawarma, the way it was made in Israel. Over the years
Mustafa, the great shawarma chef, got old, moved to a new location and stopped
making shawarma. Everywhere I go nowaday, they have chicken, turkey or beef
shawarma. Not the same thing and I don't care what their rationalizaion is. My
friends in Israel try to introduce me to their favorite shawarma places, but I
have yet to find a great one Some places, like this one in Bi'ina, mix some lamb
on the rotating spit. Not the geratest, but better than a lot of others. I guess
it's better than getting none. |
