SEAFOOD FONDUE |
Ingredients:
- Fondue cheese sauce
- 2 T canola oil
- 6 ounces peeled and deveined shrimp, chopped
- 4 ounces chopped crawfish tail meat or scallops
- 4 cloves minced garlic
- 1 t Cajun seasoning
- 1 habanero pepper or two jalapenos minced
(depends on your love of heat)
- C sliced shiitake mushrooms
- 1/2 C diced green onions
- 1/2 C dry red wine

Instructions:
- prepare basic fondue and set aside
- in medium saucepan heat oil
- add seafood stirring constantly.
- when shrimp start turning orange add garlic, Cajun seasoning and hot
pepper
- add mushrooms and onions and keep stirring
- add wine, and simmer for 3 minutes.
- fold the sauted seafood into the fondue and stir until it gets
incorporated
- pour into fondue pot and serve with crusty French bread.
C = cup T = tablespoon t = teaspoon
