OIL FONDUE
2 cups canola oil
3 lbs of mixed meats cut into 3/4" cubes
salt and pepper to taste

Dips of your choice - here are some of my favorites:
  • Garlic aioli
  • Blue cheese dressing
  • Tunisian harissa
  • Wasabi and soy sauce
  • Yemenite zhuk


     
This fondue is, in a way, simpler than the cheese fondue. You just heat up the oil and place it on a burner in the middle of the table. Everyone gets to pick from a variety of meats which could include different cuts of beef, pork, lamb, sausage, bacon etc. Use your imagination. Pre-cut the meats and keep in the fridge until 20 minutes before serving.

Your guests place their fondue fork with their chosen meat into the oil pot and cooking to their desired degree. They can then dip it into one of the dips you have picked, or just put some salt and / or pepper on their morsel and eat it.
