1 1/2 lbs vine or cherry tomatoes chopped
1 C finely chopped onion
1 C finely chopped yellow bell pepper
2 medium jalapeno peppers ribs and seeds removed
1/2 C lime juice
5 garlic cloves minced
1 bunch finely chopped cilantro
1/4 t salt
Preparation:
combine onion, jalapenos, garlic, lime and salt in a
serving bowl
set aside and let marinate while you chop the tomatoes, bell pepper and cilantro
add tomatoes, bell pepper and cilantro to bowl and stir to combine ingredient
taste and add more salt if necessary
let it marinate in the fridge for at least 15 minutes before serving
serve with a slotted spoon or corn chips on the side
